Sheet Pan Mushroom and Gnocchi

Ingredients

  • 1 pound mixed wild mushrooms
  • 2 medium shallots
  • 1 pound fresh, shelf-stable, or frozen potato gnocchi
  • 3 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Fresh thyme leaves, for garnish

Instructions

  1. Preheat oven to 400F
  2. Slice mushrooms, chop shallots
  3. Place mushroom, shallots, and gnocchi in a mixing bowl and drizzle with olive oil. Add seasoning and toss to coat oil and seasonings.
  4. Turn out onto baking sheet in an even layer
  5. Roast for about 15 to 20 minutes stirring about half way through
  6. Garnish with fresh thyme, if desired, and serve
